CARROT APPLESAUCE CAKE 
2 c. flour
1/2 c. oat-bran cereal
1 tbsp. baking soda
1 tbsp. cinnamon
1 tsp. nutmeg
1 tsp. salt (optional)
1 c. raisins
4 eggs
3/4 c. vegetable oil
1 1/2 c. sugar
1 tsp. vanilla
1 2/3 c. applesauce
3 c. shredded carrots

Mix flour, oat-bran cereal, baking soda, cinnamon, nutmeg, salt, and raisins. In another bowl mix eggs, vegetable oil, sugar, vanilla, applesauce, and carrots. Combine and mix all ingredients.

Pour into tube pan that has been well greased. Bake at 350 degrees for 65 minutes. Cool completely. Can be frozen.
