GREEN PEA GUACAMOLE 
For those who love guacamole dip but can't afford all the saturated fat of avocado, this dish offers the best of both worlds.

3 c. green peas, fresh or frozen
1 c. red onions
2 tbsp. lemon juice
2 tsp. minced garlic
1 tsp. ground cumin
1/4 tsp. fresh ground black pepper
1/8 tsp. cayenne pepper
Salt

Steam peas if fresh but do not overcook. If frozen, just defrost. Puree press in blender or food processor with lemon juice, onions, garlic, cumin and black pepper. Add cayenne and salt to taste.

Good recipe. We didn't have an onion so substituted onion flakes instead (real would have been better). The guac was a little bland so we added 1/2 an adobo pepper. Adds spice and a great taste!

Another and smaller version (called Mocomole) is 1 cup frozen green peas, thawed; 1 tsp. cumin; 3 tbsp. diced onion; 1 large clove garlic; all blended until smooth. Add 1 tbsp. lemon juice and salt & pepper to taste. Mix until well blended. Enjoy!
