RICE PUDDING 
3 c. leftover rice
2 c. milk
1 whole egg and 1 egg white
1 tbsp. sugar
1/4 c. raisins
Cinnamon and nutmeg to taste

Combine rice, milk, beaten eggs, sugar, raisins and spices in saucepan. Mix well and cook over medium heat, stirring well and often, until thick, about 5 minutes after boiling. Cool and serve. 4 servings.
