MAGIC EGGPLANT CASSEROLE 
1 eggplant, sliced thinly
1 egg, beaten
Dry bread crumbs

Slice eggplant, dip in egg and bread crumbs, fry in oil until soft. Sliced ripe olives Sliced tomatoes Grated Mozzarella and Jack cheese Diced celery Sliced water chestnuts Marinara sauce (lg. jar or can) Marinated artichoke hearts Garlic, minced

Layer sauteed eggplant with marinara sauce, cheeses, and any or all other ingredients. (What you like and what you have on hand.) Bake at 350 degrees for about 30-34 minutes until bubbly.
