BOULFOUL - WEST INDIES 
1 lb. codfish, ling fish
2 lg. onions
2 lg. tomatoes
4 eggs (hard boiled)
4 lemons
3/4 c. cooking oil or olive oil

(Pepper sauce or Tabasco can be added to taste.)

Soak codfish in enough water to cover, add lemon juice and leave overnight. Wash and bone codfish, break into small pieces. Add cooking or olive oil and put into flat serving dish. Slice eggs, tomatoes and onions and lay on top of codfish.
