IRISH SODA BREAD 
4 c. King Arthur flour
1/2 c. sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 1/2 tsp. caraway seeds
1 c. raisins
1 egg
2 tbsp. liquid shortening
1 1/2 c. buttermilk, room temperature

Preheat oven to 375 degrees. Put first 6 ingredients in a mixing bowl and stir well. Add raisins and stir. Then add egg and shortening and stir. Now gradually add buttermilk until you have a firm but not stiff dough (like a biscuit dough). Put on lightly floured board and knead about 2 minutes, until dough becomes smooth. Flatten dough and put in a well greased 9 inch cake pan. Cut a 4 inch cross in center of loaf with a sharp floured knife and bake for 40 minutes.

Loaf is done if cake tester inserted in center of loaf comes out clean.

If you do not have buttermilk, then mix 1 cup milk and 1 1/2 tablespoon vinegar and let stand.
