BAKED EGGPLANT 
1 onion
1-2 eggplants
1-2 cloves garlic
2 tomatoes
1 tsp. basil
1/4 tsp. cinnamon
1 lemon (juice of)
Dash of salt & pepper
1/2 c. Swiss cheese

Brown onion and garlic. Add tomatoes, basil, cinnamon, lemon, salt and pepper. Simmer. Broil eggplant with oil. Arrange 1/2 in bottom of pie plate. Cover with 1/2 sauce. Add remainder of eggplant and cover with sauce. Top with Swiss cheese and bake at 325 degrees until cheese is brown.
