NORWEGIAN FRUIT CAKE 
4 c. walnut halves
1 1/2 c. dates
1 1/2 c. candied cherries
1 1/2 c. candied pineapple
3/4 c. candied orange peel
1 c. plus 2 tbsp. sifted flour
1 c. plus 2 tbsp. sugar
1 tsp. salt
3/4 tsp. baking powder
4 eggs
1 tsp. rum flavoring
1 tbsp. vanilla

Mix fruits and nuts. Sift flour and baking powder, mix with sugar and salt. Pour over fruit. Beat together eggs and flavorings. Mix well with rest. Bake in 9x13 inch pan, greased and lined with wax paper. Bake on low rack for 1 1/2 hours on 275 degrees.

Cool with paper on for 1/2 hour. Remove from pan. Remove paper. Cool thoroughly. Sprinkle with 1/2 cup brandy. Cut crosswise in 4 even cakes. Wrap in foil. Store in cool place.
