LIGHT SOUR CREAM COFFEE CAKE 
1/4 c. butter
3/4 c. sugar
1/2 c. liquid egg substitute
1 c. light sour cream
1 tsp. baking soda
1 tsp. vanilla
3/4 tsp. baking powder
1 1/2 c. flour
1/2 c. walnuts, chopped and toasted
2 tsp. cinnamon

Cream butter and 1/2 cup sugar until fluffy. Add egg substitute. In separate bowl, combine sour cream and soda. Add to first mixture. Mix in vanilla. Add flour, baking soda and baking powder.

Combine toasted walnuts, 1/4 cup sugar and cinnamon. Stir half into batter. Spray 9 inch square pan with vegetable spray. Pour in batter, top with remaining nuts. Bake at 350 degrees for 40 minutes.
