PARTY CHEESECAKES 
3 (8 oz.) pkgs. lite cream cheese (room temp.)
3 eggs
3/4 c. sugar
1 tsp. vanilla (or lemon juice)
Vanilla wafers
Fruit topping (canned fruit fillings)

Line cupcake pans with paper liners. Place a wafer in each liner. Beat cheese, eggs, sugar and vanilla until creamy. Pour over wafer 1/2 to 2/3 full. Bake 400 degrees F. for 15-20 minutes. Top with fruit topping. 36 servings.
