PEANUT BUTTER COOKIES 
1/2 c. soft shortening
1/2 c. butter
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar, packed
1 egg
1 1/4 c. sifted flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Mix shortening, peanut butter, sugars and egg thoroughly. Sift rest of ingredients together and stir into first mixture. Chill dough. Heat oven to 375 degrees. Roll dough into balls about 1 inch in diameter (larger for home use).

Place about 2 inches apart on lightly greased baking sheet. Flatten with fork, making a criss-cross design. Bake 8-10 (or 10-12) minutes or until set. Makes about 4 dozen cookies.
