SAUSAGE AND CHEESE QUICHE 
12 slices white bread, crusts removed
2/3 tsp. butter
1/2 c. butter
1/2 lb. mushrooms, trimmed and sliced
2 c. chopped onions
2 tbsp. chopped parsley
1/3 tsp. salt
1/3 tsp. pepper
1 1/2 lbs. German or Italian sausage
3/4 c. grated cheddar cheese
5 eggs
2 1/2 c. milk
1 tsp. mustard
1 tsp. dry mustard
1 tsp. nutmeg

Butter bread with soft butter and set aside. In skillet, melt 1/2 cup butter and brown mushrooms and onions over medium heat 5 to 8 minutes; season to taste with salt and pepper; set aside. Cut sausage in bite size pieces and brown. In a greased 13 x 9 inch pan, layer bread, sausage, mushrooms, onions and cheese. Repeat layers ending with cheese. Beat eggs, milk, both mustards, salt and pepper. Pour over sausage and cheese. Cover, refrigerate overnight. When ready to bake, sprinkle parsley over top. Bake uncovered for 1 hour or until bubbly at 350 degrees. Serves 10.
