MORNING GLORY MUFFINS 
1 1/4 c. sugar
2 1/4 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
2 c. shredded carrot
1/2 c. shredded coconut
1/2 c. raisins or dates
1 c. grated apple
8 oz. crushed pineapple, drained
1/2 c. pecans or walnuts, chopped
3 eggs
1 c. vegetable oil
1 tsp. vanilla

Sift together sugar, flour, cinnamon, and baking soda into a large bowl. Add the fruits, carrots, nuts and stir. Whisk the eggs with oil and vanilla. Pour into the dry ingredients and blend well. Spoon batter into greased muffin tins. Fill 3/4 full and bake in a 350 degree oven for 35 minutes or until done. Cool.

Twenty-four hours improves their flavor and they freeze well.
