STUFFED GREEN PEPPERS 
3 lg. green peppers
2 tsp. salt
1 lb. beef, ground
1 1/2 c. brown rice, cooked
2 tbsp. celery, chopped fine
2 tbsp. onion, chopped fine
1 tsp. salt
1/4 c. chili sauce
1 only egg or egg substitute
2 tbsp. cheddar cheese, shredded

Half peppers lengthwise; remove stems, seeds and membranes. Add salt to enough boiling water to cover peppers. Boil 5 minutes, drain. Combine other ingredients except cheese. Mix well. Fill pepper halves. Place in 1/2 inch hot water in a baking pan. Bake uncovered at 350 degrees for 45 to 55 minutes. Sprinkle cheese over and bake 5 minutes longer. Serves 6.
