"GRATE" ZUCCHINI BREAD 
3/4 c. whole wheat flour
3/4 c. unbleached white flour
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt, if desired
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1 egg white
1 whole egg
6 tbsp. vegetable oil
1 1/4 c. packed, finely grated unpeeled zucchini
1 tsp. vanilla
1/2 c. finely chopped nuts (opt.)
1/3 c. raisins (opt.)

1. In large bowl, combine both flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

2. In medium bowl, mix together egg white, whole egg, oil, zucchini and vanilla. Add this mixture to dry ingredients, stirring to combine well. Stir in nuts and raisins, if desired.

3. Pour batter into greased 9 x 5 x 3 inch loaf pan.

4. Bake in preheated 350 degree oven for 50 to 60 minutes or until a pick inserted in the center of bread comes out clean.
