PINEAPPLE ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 3 tsp. vanilla 1 (8 oz.) can crushed pineapple, drained 2 c. zucchini, grated (or carrots) 3 c. flour 1 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. allspice 1/2 tsp. cloves 1 c. nuts, chopped Beat eggs until light and foamy. Add sugar, oil, and vanilla, well drained, pineapple and zucchini. Mix lightly, but well. Combine flour, salt, baking powder, soda, and spices. Add to zucchini mixture. Stir until well blended. Add nuts and pour into 4 loaf pans (7 x 3 inch size), greased and floured. Bake 35 minutes at 350 degrees. Cool 10 minutes. Remove from pans. |
