STUFFED SWEET POTATOES 
6 med. sweet potatoes, baked
1/2 lb. mushrooms, sliced
6 tbsp. butter
1 tsp. salt
1/4 tsp. fresh ground pepper
2 eggs, beaten
1/3 c. fresh orange juice
2 tbsp. grated orange rind

Bake sweet potatoes 1 1/2 hours at 375 degrees or until soft. Cut a thin slice from the top of each potato, lengthwise, and carefully scoop out the pulp. Mash. Saute mushrooms in 4 tablespoons of butter. Mix the pulp, mushrooms, seasonings, eggs, orange juice, and grated rind. Stuff shells with mixture and dot with remaining butter and bake in 375 degree oven until brown, about 20 minutes. Serves 6.
