PEPPER-ONION RELISH | |
4 c. onions, finely chopped 2 c. red bell peppers, finely chopped 2 c. green bell peppers, finely chopped 1 c. sugar 1 qt. distilled white vinegar 4 tsp. salt 1. Combine all ingredients and bring to a boil. 2. Cook until slightly thickened (about 45 minutes), stirring occasionally. 3. Pack into hot, sterilized jars. Seal. Process in boiling water bath for 5 minutes. Makes 5 (1/2 pints). |
