POTATO AND CARROT CASSEROLE 
5 or 6 med. potatoes
3 or 4 lg. carrots
1 c. chicken broth
Cheese (your favorite)

Preheat oven to 400 degrees. Peel and slice potatoes and carrots. Alternate layers of potatoes and carrots. Pour chicken broth over vegetables. Bake until tender. Top with cheese and put back into oven and melt cheese. May add onions and green peppers to layers if so desired.
