1 1/2 lbs. ground beef 1/4-1/2 lb. sweet Italian sausage 3 lg. onions, chopped (3 c.) 2 lg. cloves garlic, minced 3 lbs. canned tomatoes 3 tsp. salt 3 tsp. Italian herbs 12-14 lasagna noodles 3 eggs 3 (10 oz.) frozen chopped spinach, thawed and drained 1 1/2 lbs. cottage cheese 1 1/2 c. grated Parmesan cheese 2 (6 oz.) pkgs. sliced Mozzarella cheese 1. Brown hamburger meat and sausage in large kettle. Remove with slotted spoon, reserve. Pour off all but 3 tablespoons of the fat. Saute onions and garlic in the fat until soft. Return meat to the kettle with tomatoes, 2 teaspoons of the salt, Italian herbs and 1/2 teaspoon pepper. Simmer over low heat, stirring several times, at least 30 minutes or until mixture thickens to your taste. 2. Cook lasagna noodles according to package directions. Drain and place in bowl of cold water to keep separated. 3. Beat eggs in large bowl, add drained spinach, cottage cheese and remaining teaspoon of salt. 4. When ready to assemble, drain noodles on paper towel. Arrange noodles on bottom of (2) 13 x 9 x 2 inch baking dishes. Spoon part of spinach mixture over noodles, add part of meat sauce. Sprinkle with Parmesan cheese. Continue layering until all ingredients are used. Top with Mozzarella cheese. 5. Bake in 350 degree oven for 30 minutes or until bubbly hot. May be frozen. |
