EASY CORN PUDDING | |
1 can (grade A corn, cream style) or 2 c. fresh Silver Queen cut off cob and blanched 2 eggs 1/2 c. milk and 2 tbsp. butter, melted 1/4 c. sugar (or less) 2 tsp. flour 1/2 tsp. salt (or less) Grease baking dish. Mix salt, sugar, and flour in baking dish. Add slightly beaten eggs to milk. Combine corn with ingredients. Heat butter and add to mixture. Bake at 350 degrees in pan with 1/2 inch water until blade of knife comes out clean. Serve at once. Also good cold next day at lunch. Serves 4. |
