ZUCCHINI BOLOGNESE 
1 lb. sm. fresh zucchini
2 stalks celery
1 can tomato sauce (8 oz.)
1/8 tsp. garlic powder
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. basil
1/8 tsp. rosemary
2 tbsp. olive oil
2 tbsp. grated Parmesan cheese

Scrub zucchini, slice 1/4 inch thick. Slice celery 1/8 inch. Place both in 1 1/2 quart glass casserole. Mix remaining ingredients and pour over. Sprinkle with cheese. Cook covered in microwave 7 minutes. Stir. Cook 6-7 minutes longer or until tender. Let stand 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
