CAULIFLOWER SALAD 
1 med. head iceberg lettuce
4 c. cauliflower florets
1 c. thinly sliced red onion
3/4 c. reduced calories mayonnaise
Parmesan cheese imitation bacon bits

Tear lettuce into bite-sizes. Line bottom of bowl with lettuce, top with cauliflower and onion. Spread mayonnaise over entire surface of salad. Sprinkle with cheese and bacon bits. Cover and refrigerate overnight. Toss just before serving. 12 servings. Each serving - 1 1/2 vegetables. 1 1/2 fat. 25 calories.
