PORK ROAST 
4 tbsp. + 1 tsp. butter
1 c. finely chopped onion
1 c. finely chopped green pepper
1 c. finely chopped celery
1 minced garlic clove
2 tsp. creole seasoning
1 (4 lb.) pork loin roast

Mix all ingredients except roast. Saute in butter. Place roast in baking dish fat side down. Make several length wise slices in roast, being careful not to cut clear through bottom. Stuff roast with stuffing. If any is left, spread it on top and sides of roast using hands. Bake, uncovered at 275 degrees for 3 hours. Turn heat up to 475 degrees for 10 to 15 minutes until brown. Let stand 20 minutes before serving.
