EGG CUSTARD PIE 
2 c. milk, scalded
5 tbsp. sugar
1/4 tsp. nutmeg
3 eggs, beaten slightly
1/8 tsp. salt
1/2 tsp. vanilla

Beat eggs until egg yolk and whites are blended. Add sugar, salt, nutmeg and flavoring. Mix thoroughly; add milk. Mix slowly, stirring constantly. Pour into unbaked pie shell. Bake in hot oven, 425 degrees, until inserted knife comes out clean.
