CROUTONS 
Cut the bread you want to use (pumpernickel, rye, French or white) into 1/2-inch cubes and dry in a 200 degree oven. Toss 3 cups of cubes with 4 tablespoons of butter, melted and seasoned with one of the following mixture. Place on baking sheet and, stirring frequently, lightly brown in 300 degree oven.

SEASONINGS:

1. 1/4 cup freshly grated Parmesan cheese, 1 teaspoon paprika and a dash of cayenne pepper.

2. 1/2 teaspoon salt, 2 teaspoons mixed crumbled dried herbs and pepper

3. 1 1/2 tablespoons fresh lemon juice, 1 tablespoon freshly grated lemon peel and 1 teaspoon paprika.

4. Grated or very finely minced garlic, minced oregano, salt and pepper to taste.
