CHICK PEA SALAD 
1 can chick peas, rinsed and drained
1 c. pepper, chopped
1 cucumber (quartered and sliced)
2 tomatoes, finely chopped
Dried mint

Put ingredients into a salad bowl and toss well with a dressing of olive oil, lemon juice, crushed garlic, and salt to taste. Sprinkle with fresh chopped parsley. NOTE: Kidney beans, lima beans, shell beans and chick peas may be treated in the same manner separately or in any combination.
