TURKEY & RICE SALAD 
3 c. hot cooked rice
1 c. Vinaigrette Dressing
2 c. cubed cooked turkey or chicken
1 pineapple chunks (1 c.)
1 can (8 oz.) peaches, drained & cut into chunks
1/2 c. raisins
2/3 c. chopped peanuts (salt & pepper to taste)
Lettuce leaves
2/3 c. plain yogurt

Combine hot rice and 1/2 cup of the dressing in large bowl. Stir to coat. Cool. Stir in turkey, pineapple, peaches, raisins, peanuts, salt, pepper and 6 tablespoons dressing. Arrange lettuce leaves on individual serving plates; top with rice mixture. Blend yogurt and remaining 2 tablespoons dressing in small bowl; spoon mixture over salad. Makes 4 servings.
