2 bunches green onions, sliced 2 tbsp. butter 1 (10 oz.) pkg. frozen chopped spinach, minced 1/4 c. parsley, minced 1/2 tsp. salt 1/4 tsp. pepper (or cayenne) 6 eggs 1/4 c. sour cream 1/2 c. bread crumbs (fresh) 3/4 c. Swiss cheese, grated (or white cheddar) 3/4 c. Parmesan cheese, grated Preheat oven to 350 degrees. Saute onion in butter until slightly cooked. Thaw spinach, drain and chop or mince very fine. Add to the onions and cook 1 minute more. Add parsley, salt, pepper, and set aside. In mixing bowl, beat eggs, then add cream, fine bread crumbs, Swiss or cheddar cheese and half the Parmesan and mix well. Add spinach, pour into a buttered 9x9 inch pan, garnish with last of the Parmesan cheese and bake for 20 minutes until done. Cool, cut and serve as an appetizer. |
