LIGHT FRUIT CAKE 
1 c. salad oil
1 1/2 c. brown sugar
4 eggs
3 c. flour
1 tsp. baking powder
2 tsp. salt
2 tsp. cinnamon
2 tsp. allspice
1 tsp. cloves
1 c. fruit juice, apple, pineapple or orange
1 c. shaved citron
1 c. chopped candied pineapple
1 1/2 c. whole candied cherries
1 c. seedless white raisins
1 c. chopped figs or dates
3 c. chopped nuts

Combine oil, sugar and eggs. Beat 2 minutes. Sift 2 cups flour, baking powder, salt and spices. Stir into oil mixture with fruit juice. Mix another cup of flour with fruit and nuts. Combine with batter and mix thoroughly. Bake in two 9x5x3 inch loaf pans lined with wax paper. Bake at 275 degrees for 2 1/2 to 3 hours. Bake on oven's upper shelf. An electric oven takes longer.
