BAKED SAVORY MEATBALLS 
1 lb. lean beef, ground
1/2 lb. pork, ground
1/2 c. applesauce
3/4 c. soft bread crumbs
1 egg, lightly beaten
1 med. onion, chopped fine
Salt & pepper
Flour
3 tbsp. bacon fat
2/3 c. ketchup
1/2 c. water

Have the butcher grind beef and pork together. Mix with applesauce, bread crumbs, egg and onion. Season to taste and shape in small balls, about the size of a walnut. Roll in flour and brown well in bacon fat in a heavy skillet.

Transfer to a shallow casserole, pour over ketchup and water mixed, cover and bake in a 375 degree oven for 35 to 40 minutes. Stir once or twice while baking. Instead of the ketchup you can use canned tomato sauce, barbecue sauce or a can of undiluted tomato soup to which salt and a little sweet basil are added. Serve with macaroni and cheese or baked potatoes and buttered broccoli. Serves: 4 to 5.
