JERRY'S MEXICAN 
2 lbs. ground meat (beef or turkey)
3 tbsp. olive oil
1 (12 or 16 oz.) jar salsa
1 or 2 cans refried beans
1 pkg. taco mix (opt.)
2 or 3 lg. green bell peppers, diced into 3/4 inch approx. size
2 or 3 med. to lg. onions, diced into 3/4 inch approx. size
1/4 c. sliced jalapenos (fresh or canned)
1/4 c. hot sauce
1 c. water
1 or 2 cans whole tomatoes, chopped
1 can tomato paste
Salt & pepper to taste
1 lb. finely grated New York sharp or extra sharp cheddar cheese
1/2 pt. sour cream (opt.)
2 c. finely sliced or chopped lettuce
1 bag good tortilla chips
1 or 2 qt. cooked rice (opt.)
Your favorite drink

In a cast iron skillet or other type cookware put the olive oil and heat. Add the ground meat, onions and peppers. Cook just to brown lightly only. In a large cast iron pot or other such container that will hold a minimum of 4 quarts add all ingredients ground meat through salt and pepper. Mix very well, cook on low to medium heat 15 to 30 minutes maximum STIRRING CONSTANTLY IF NEEDED TO KEEP FROM BURNING.

Serve with rice if preferred, put cheese, lettuce and sour cream on top if you like that sort of stuff and sided with chips. KEEP DRINK READILY AVAILABLE AND ENJOY THE HEAT. WIPE BROW OFTEN TO CLEAR EYES.
