CHICKEN WITH APRICOTS 
1 (2 1/2 to 3 lb.) broiler fryer chicken
2 tbsp. soy sauce
2 tbsp. honey
1 tbsp. vegetable oil
1 tbsp. chili sauce
1/2 tsp. ground ginger
1/8 tsp. cayenne pepper
1 (16 oz.) can apricot halves in juice, drained

Cut chicken into pieces. Cut each breast half into halves and remove skin. Place chicken in 13 x 2 x 9 inch rectangular pan.

Mix remaining ingredients except apricots. Brush over chicken, turning pieces to coat. Cook uncovered in 375 degree oven, brushing with soy sauce occasionally, until thickest pieces are done, 50 to 60 minutes.

About 5 minutes before chicken is done, arrange apricots around chicken; brush chicken and apricots with soy sauce mixture. Cook until apricots are hot, about 5 minutes. Spoon liquid from pan over chicken and apricots. Serves seven.
