IRISH POTATOES 
5 tbsp. softened butter
1/3 c. light corn syrup (clear Karo)
1/2 tsp. salt
3 1/2 c. 10X sugar
1/2 tsp. vanilla
1 (3 1/2 oz.) can coconut
Cinnamon

Blend butter, syrup, salt and vanilla and coconut in a large bowl. Add 10X sugar a little at a time; mix well. Work sugar in as if you were making a dough, you may want to transfer mixture onto a hard surface. Pull off small portions and roll into balls. Drop balls into a bowl of cinnamon to coat. Place coated balls on a cookie sheet and refrigerate until firm.
