CHEWY DATE PINWHEELS 
1 1/2 c. chopped dates
1 c. sugar
1 c. water
1/2 c. chopped nuts (pecans)

COOKIES:

1 c. butter
2 c. packed brown sugar
1/2 c. sugar
3 eggs
4 1/2 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

In a saucepan combine dates, sugar and water. Cook over medium heat, stirring constantly, until thick about 8 minutes. Add nuts and cool.

Meanwhile cream butter and sugars. Add eggs, one at a time, beating well after each addition. Combine flour, salt, soda and cinnamon. Add gradually to butter mixture. Divide dough and roll on a lightly floured surface to a rectangle 1/4 inch thick. Spread with half the date filling and roll up like a jelly roll. Repeat with the remaining dough and filling. Chill the rolls overnight.

Before baking cut into 1/2 inch slices. Place on greased cookie sheets 2 inches apart, bake at 375 degrees for about 12 minutes. Makes about 4 dozen cookies.
