MO'S LOW-CARB TACO SALAD 
This is a low-carb taco salad that will fill you up in no time. You can also add some hot sauce or salsa to the salad without compromising the carbs.

1 lb. ground beef
1 small onion, chopped
1 env. taco seasoning
1/4 (2 lb.) block Velveeta cheese (8 oz.)
1 (10 oz.) can Rotel tomatoes
1 bunch green onions
1 head of lettuce
1 (16 oz.) bag shredded cheese
1 (6 oz.) can sliced black olives, drained
1 (16 oz.) bottle Ranch dressing (HIDDEN VALLEY® or Kraft)

Brown beef and onion, then simmer with taco seasoning as it is directed on back of package. Cut up Velveeta and pour in Rotel, microwave until smooth (stirring every two minutes).

Chop green onions and lettuce. Plate the lettuce, top with taco mixture, then shredded cheese, then Rotel mixture, then green onions, then black olives, and finally Ranch dressing.
