PEANUT BUTTER CRISSCROSSES 
1 egg
1/2 c. sugar
1/2 c. brown sugar
1 c. peanut butter
1/2 c. chopped peanuts

Turn oven to 350 degrees. In a medium mixing bowl beat egg slightly with a wooden spoon. Beat in sugar and brown sugar with wooden spoon until well combined. Add the peanut butter and stir until the ingredients are well mixed. Stir in the chopped peanuts.

With hands, shape dough into 1 inch balls. Place about 2 inches apart on ungreased cookie sheets. With a fork dipped in sugar, press crisscross design in each ball of dough.

Bake in the 350 degree oven for 10 to 12 minutes or until golden. Let cool on cookie sheets 1 to 2 minutes. With a pancake turner lift cookies onto a cooling rack to finish cooling. Makes about 36 cookies.
