YOGURT PARMESAN CHICKEN | |
2 tbsp. lemon juice 1 (2 lb.) skinless frying chicken 1/2 c. low-fat yogurt 1/4 c. low-fat mayonnaise 2 tbsp. Dijon mustard 2 tbsp. Worcestershire sauce 1/2 tsp. dried thyme 1/4 tsp. cayenne pepper 1/4 c. sliced scallions 1/4 c. grated Parmesan cheese Salt & pepper to taste Cut chicken into serving size pieces. Arrange in a single layer in 9"x13" pan. Drizzle with lemon juice; sprinkle with salt and pepper. Blend yogurt, mayo, mustard, Worcestershire sauce, thyme, cayenne pepper and scallions. Spread over chicken. Bake at 350 degrees for 50 to 60 minutes. Drain off juices. Sprinkle with Parmesan cheese; place under broiler to brown, for about 3 minutes. Makes 4 to 6 servings. |
