CHEESY CHICKEN AND NOODLES 
Garlic
2 tbsp. olive oil
4 - 6 boneless, skinless chicken breasts
Salt, pepper, lemon juice, poultry seasonings
8 - 12 oz. cooked egg noodles
1/2 c. chicken broth
15 oz. low fat ricotta cheese
1/4 c. Parmesan cheese
Mozzarella cheese (low fat)
15 oz. canned crushed tomatoes
2 tsp. Italian seasoning

Pound chicken breast with garlic. Saute over medium heat until both sides are brown, when done, season with salt, pepper and lemon juice. Lay noodles in glass pan, pour chicken broth over noodles, then lay chicken pieces over noodles. Put dabs of ricotta cheese on top of chicken breasts, then sprinkle with Parmesan cheese. Next put slices of mozzarella cheese over ricotta cheese. Pour crushed tomatoes over this and sprinkle with Italian seasoning. Bake at 350 for 1 hour or until bubbling.
