SZECHWAN CABBAGE SALAD 
1 head cabbage, shredded
2 tbsp. salt
1/4 c. sesame oil
4 scallions, sliced
1/4 tsp. white pepper
2/3 tsp. crushed red pepper
1/4 c. sugar
1/4 c. wine vinegar
2 cloves garlic, minced

In a large bowl, salt shredded cabbage and let stand for one hour. Heat oil and saute scallions until soft. Add the white pepper and red pepper; stir. Add the sugar, vinegar and garlic; simmer over low heat for 2-3 minutes. Pour this sauce over the cabbage and toss. Chill in the refrigerator for one hour before serving. Serves 6.
