PINEAPPLE CAKE - CHEESE ICING 
1 (20 oz.) can crushed pineapple with juice
2 c. flour
2 c. sugar
2 eggs, slightly beaten
2 tsp. vanilla
2 tsp. baking soda
1 c. chopped nuts (walnuts only)

In a mixing bowl, combine all ingredients in order given. Stir by hand using a wooden spoon. Bake in an aluminum pan only at 350 degrees, 35 to 40 minutes, don't over-bake. While cake is baking, make icing.

ICING:

1 (8 oz.) pkg. cream cheese
1 1/2 c. powdered sugar
1 tsp. vanilla
1 stick butter, softened

Mix all ingredients with electric beater and pour over cake after cooling 10 minutes. Sprinkle chopped nuts over top.
