BLUEBERRY MUFFINS 
2 c. self-rising flour
3 tbsp. cooking oil
1/2 c. sugar
1 c. milk
1 beaten egg
2 1/2 c. blueberries

Combine egg, oil, milk and sugar. Add sifted flour and beat until smooth. Stir in blueberries and mix well. Pour into paper liners in muffin pan and fill 2/3 full. Bake for 25 minutes at 400 degrees. Makes 24 muffins.
