CALZONE 
1 1/2 pkgs. yeast (any kind)
1 tbsp. honey
1 c. hot water
1 1/2 tsp. salt
2 1/2-3 c. flour - may use whole wheat

FILLING:

1 lb. Ricotta
1 lb. fresh spinach or frozen, drained
2 cloves garlic, crushed
1/2 c. minced onion
1 1/4 c. (1 lb.) Mozzarella cheese
1/2 c. Parmesan cheese
Dash of nutmeg
2 tbsp. butter, melted
Salt and pepper to taste

1. Soften together the yeast, honey and water.

2. Mix salt and flour together, add to liquid.

3. Knead 10-15 minutes, cover, set in a warm place until double (approximately 1 hour). Punch dough down, divide into 6 sections, roll into rounds 1/4 inch thick. Fill with 1/2 to 3/4 cup filling on half of circle leaving 1/2 inch rim, moisten with water. Fold, and crimp with fork.

Bake on oiled tray at 450 degrees for 15-20 minutes. Have a bowl of spaghetti sauce on the side to pour over calzone, if desired. Serves 5.

FILLING: Saute garlic and onions. Mix all together, Ricotta cheese, spinach, Mozzarella cheese, Parmesan cheese, garlic, onion, nutmeg, salt, pepper and butter.
