GURCK CHICKEN | |
Vegetable cooking spray 4 chicken breasts, skinned & boned 1/2 c. water Cook chicken 10 minutes. Add water, cover and simmer 15 minutes. Drain. RAINBOW TOPPING: 1 sm. onion, sliced & separated into rings 2 tbsp. olive oil Small sweet red, green & yellow peppers, cut into strips 1/2 c. dry sherry 1 tbsp. chopped parsley 1/8 tsp. salt 1/8 tsp. pepper Hot pasta Garnish with parsley sprigs Saute onion and peppers, 2 minutes. Add sherry, parsley, salt and pepper. Spoon over chicken and pasta. Serve immediately. Serves 4. |
