SWEET `N' SOUR CHICKEN 
1 (8 oz.) bottle Russian dressing
1 (12 oz.) jar apricot preserves
1 pkg. onion soup mix (from 2 oz. box)
3 to 6 chicken breasts, split, skinned and boned

Preheat oven to 350°F. In a medium sized bowl, mix together the dressing, preserves and onion soup. Place the chicken in a 9 x 13 baking pan. Pour the dressing mixture over the chicken.

Bake for 25 minutes, covered, then uncover and bake for 20 minutes more or until the chicken is fork-tender and no pink remains. Note: Serve over hot rice.
