MICROWAVE ZUCCHINI BAKE 
1 1/2 lbs. zucchini, cut into 1/2 inch cubes
3 tbsp. butter
4 eggs, beaten
1 c. (4 oz.) grated sharp Cheddar cheese
1 can French fried onion rings

In a 2 quart glass casserole, combine zucchini and butter. Cover and cook for 5 minutes on high power.

Combine eggs and cheese and stir into zucchini. Cook, covered on simmer/defrost power for 10 minutes. Top zucchini with onion rings and cook uncovered on simmer/defrost power for 2 minutes. Serve hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
