BEEF STEW WITH COFFEE | |
1/4 c. flour 2 tsp. salt 3 lbs. chuck steak (1 inch cubes) 1/4 tsp. pepper 6 potatoes, quartered 2 tbsp. oil 10 sm. white onion 4 carrots, quartered lengthwise 1 to 2 c. strong coffee Mix flour with salt and pepper. Roll meat in it, and brown the meat in oil. Add one cup of coffee, then cover and simmer about 1 1/2 hours. Add vegetables and cook for 30 to 40 minutes more. Add more coffee if liquid is needed. Thicken gravy with remaining seasoned flour. |
