SHRIMP SAGANAKI 
1 lb. med. shrimp, peeled
1 sm. jar artichoke hearts in water, drained
4 tbsp. olive oil
1 minced garlic clove
1/4 lb. whole fresh mushrooms
1/2 tsp. salt
Fresh pepper
1/2 tsp. oregano
2 tbsp. minced fresh parsley

Wash and peel shrimp. Set aside. Drain artichokes.

Heat oil in pan and add garlic. Add shrimp and mushrooms and cook until shrimp is pink. Add artichokes and heat through. Add seasonings and serve with hot fluffy rice.
