BLUEBERRY ORANGE BREAD 
2 tbsp. butter
1/4 c. boiling water
1/2 c. orange juice
3 tsp. grated orange rind
1 egg
1 c. sugar
2 c. all-purpose flour, sifted
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. blueberries, washed fresh, drained canned or frozen

Melt butter in boiling water in a small bowl. Add orange juice and rind. Beat egg and sugar until light. Add sifted dry ingredients, alternately with the orange liquid beating until smooth. Fold in berries. Bake in a greased 1 1/2-quart loaf pan at 325°F for about an hour. Cool 10 minutes and turn out on a rack or tray. If desired, a glaze may be spooned over the loaf.

Let stand until cold and store in refrigerator as it slices better when cold.

Orange Honey Glaze:

2 tbsp. orange juice
2 tbsp. honey
1 tsp. orange rind

Mix and spoon over warm bread.
