CORNBREAD DRESSING 
2 c. white cornmeal
1/4 tsp. baking soda
2 c. buttermilk
2 tbsp. melted butter
1 egg
Salt and pepper
Dash of Tabasco sauce
1/2 tsp. salt
2 tbsp. butter
1 celery heart, finely chopped
1 lg. onion
1/2 c. stock
2 eggs

Make cornbread by combining cornmeal, soda, buttermilk, melted butter, 1 egg; add salt pepper and Tabasco to taste. Beat well and bake at 350 degrees until brown or about 30 minutes.

Crumble cornbread and add remaining ingredients. Bake separately about 30 minutes in 350 degree oven or stuff bird as desired. Use about a 10 inch frying pan (iron), if dressing is cooked separately.
